Default Chilled Lemon Flan

Oven Temp = 160 degrees

Ingredients

4oz digestive biscuits
2oz margerine
1/4 of a pint of double cream or whipping cream
Small can of condensed milk
2 large lemons

Crush the biscuits in a bag, melt the margerine in a pan and add the crushed biscuits.

Transfer into the flan dish and bake for 8 mins, leave to cool.

Grate the zest of 2 lemons ann juice also. Whip the cream till thick and fold the condensed milk into the mixture. Add the lemon zest and gradually add the lemon juice.

Pour the mixture into the flan dish and chill for 2 hours.

I have made it! Its is totally gorgeous!

It has a cheesecake base and the top is like a really rich lemon cream Paula.

Cant wait for teatime! We are having Chicken Chasseur for our main course!
