Default Need a recipe for potatoes to go with cinnamon chicken...?

We are so tired of the same old boring potato.....Cinnamon Chicken is just that.....pepper and cinnamon on chicken breast, baked. Please no mashed, au gratin, plain baked, or fried potato recipes, be creative! Thanks!!

Here is a good variety to choose from that would go great with your Cinnamon Chicken -- POTATOES AND CARROTS7 large potatoes, peeled and quartered 9 carrots, julienned 4 large sweet potatoes, peeled and quartered 2 onions, quartered salt and pepper to taste 1/4 cup vegetable oilPreheat oven to 350 degrees F (175 degrees C). Place a 1/3 cup water in a 9x13 inch baking dish. Layer in potatoes, carrots, yams and onions. Sprinkle generously with salt and pepper. Pour oil over entire dish until all ingredients are well coated. Cover or place foil over dish and bake for 2 hours.HASH BROWN CASSEROLE1 (2 pound) package frozen hash brown potatoes, thawed 1 (8 ounce) package cubed processed cheese food 2 cups half-and-half 1/2 cup butterPreheat oven to 350 degrees F (175 degrees C). Place frozen potatoes in a 13 x 9 inch baking dish. In a saucepan on the stovetop or in microwave on low, melt together cheese and butter or margarine. When melted, blend in the cream. Pour mixture over frozen potatoes, and cover pan with foil. Bake for 1 hour. Remove foil, and bake 15 minutes more.SWEET POTATO FRIES4 sweet potatoes, cut into large French fries 1 tablespoon water 2 teaspoons Italian seasoning 1/2 teaspoon lemon pepper 1 pinch salt and pepper to taste 2 tablespoons olive oilPreheat the oven to 400 degrees F (200 degrees C). Place the cut sweet potatoes into a microwave-safe dish with the water. Cook on in the microwave for 5 minutes on full power. Drain off liquid, and toss with Italian seasoning, lemon pepper, salt, pepper, and olive oil. Arrange fries on a baking sheet in a single layer. Bake for 30 minutes, turning once, or until fries are crispy on the outside.OR –TWICE BAKED POTATOES4 large baking potatoes 4 tablespoons milk salt to taste 2 tablespoons butter 1/4 cup shredded mild Cheddar cheesePreheat oven to 350 degrees F (175 degrees C). Clean and scrub baking potatoes. Pierce skin with a fork once or twice. Bake at 350 degrees F (175 degrees C) for approximately 1 hour or until the potatoes are soft and firm. Let potatoes cool slightly. Cut baked potatoes in half and scoop out pulp within 1/4 inch of the shell edge. Mash the pulp with milk, salt and butter to taste. Stuff shells with mashed pulp mixture sprinkle tops with grated cheddar cheese. Place potatoes on a baking sheet and bake at 350 degrees F (175 degrees C) for 15 minutes or until cheese is melted and bubbly.Enjoy! ~-~

Chicken and Eggplant Moussaka. It's hearty, delicious Greek food. I had some tonight at a Greek restaurant but I tracked down a recipe using chicken.

Use baking potatoes, cut them into wedges. Drizzle with some olive oil and dredge in a combination of bread crumbs, parmesan cheese, cayenne, salt and pepper. Bake at a high temperature in the oven until crisp.
